Description
A high-protein, low-carb casserole that reimagines cheesy ground beef as a crustless, savory pie. Perfect for keto and Tex-Mex flavors without carbs, it uses eggs to bind the ingredients and create a juicy, rich texture.
Ingredients
2 pounds ground beef (80/20 lean to fat, or use ground turkey)
1/2 large onion, diced fine
2 cloves garlic, minced
1/2 large bell pepper, diced (red or green)
1 packet taco seasoning (or 4 tablespoons homemade keto taco seasoning without fillers)
4 large eggs, room temperature
2 cups shredded Mexican cheese blend (cheddar, pepper jack, etc.)
Instructions
Preheat oven to 375°F (190°C)
In a large skillet, cook the ground beef over medium-high heat until browned, breaking into small pieces
Add the onion and garlic, sauté for 5 minutes until softened
Stir in the bell pepper and continue cooking for an additional 5 minutes
Mix in the taco seasoning while still on the heat
Whisk the eggs in a separate bowl, then gently fold into the beef mixture
Transfer everything into a greased 9×13-inch baking dish
Top generously with shredded Mexican cheese
Bake for 25–30 minutes, or until the cheese is golden and bubbly
Let cool slightly before slicing and serving
Notes
Browning the onions and peppers is crucial for developing a rich umami flavor
Using a lean ground turkey instead of beef makes this recipe even lower in fat and higher in protein
Leftovers store well in the refrigerator for 3–4 days and reheat well
